Santoku is a contemporary and sophisticated Japanese fine dining restaurant located in Accra, Ghana. The restaurant offers the delights of world-class Asian fusion cuisine in an environment inspired by the team behind Nobu in London and Dubai. The name ‘Santoku’ means innovation and experimentation, concepts that the chefs have explored and which result in a menu that combines traditional Japanese culinary customs with contemporary cuisine.
The menu offers a contemporary Japanese sharing concept where many dishes lean on the smaller side, and diners are encouraged to order two or three per person and share. Dishes are brought to the table as soon as they are ready, and sharing ensures that diners have a wide and varied tasting experience, selected from across the whole menu.
A private dining room, separated from the restaurant by sand-blasted glass screens with intricate bamboo overlay, can be booked for up to 18 guests who can sample the chef’s bespoke menu on a handmade reclaimed wood table. An outside terrace offers seating to a further 50 guests who can experience Santoku’s modern interpretation of Japanese cuisine and drinks under Ghanaian skies.
These ideas are also apparent in the restaurant’s design, where influences of ancient Eastern philosophy are merged with modern Western style. Hubert du Givenchy sourced traditional Japanese woodwork, and ceilings crafted in bamboo distinguish the restaurant in its exclusive, residential location Accra.
